Teatime

Still rather headachey.
Made salad with mixed leaves, pepper, cucumber and some radish. I've chopped two portions so I have a salad to take to work tomorrow. 

I added another tin of tuna to try and stave off any munchies later on this evening. And a generous squirt of non-paleo salad cream!


A generous glass of organic apple & pear juice too.


Small Tupperware tub for work tomorrow.


So hopefully that's today's food done and dusted! 

No boys with me so it's been easier to implement today as no demands for cheese or biscuit snacks. I'm going to take a couple of paracetomol now and have a hot shower.

Snackage

4pm slump. Not that I've been particularly active! Feeling hungry and headachey though. This may be due to carb & coke abstinence today after a weekend of over indulgence in both.
Having a tin of tuna and a coffee. I have mixed a little non-paleo friendly salad cream with the tuna. Again, I miss the sauces and dressings and it's just too dry with nothing on. I could try olive oil and vinegar next time.

Lunch

Cabbage stir fry.
I had some boiled slightly soggy cabbage in the fridge. I used some sesame oil, rice vinegar, tamari (gluten free) and a dash of honey (non paleo!) to stir fry it. I love normal bubble & squeak, so although not a patch on that it was certainly edible and a good use up. 
Plus a pear.

Snackage

12pm peckish. Or just wanting the crisps in the cupboard?!
Had instead:
Banana
Apple 

Browsing recipe books for inspiration.

DAY 1. Veg has arrived

My Riverford box has just arrived.  I love getting these deliveries. It really has kept me honest in precious weeks where I know I have produce to use and not waste. The quality is always good and I know that what I am eating is organic and 'clean'.
Today's box contains: 
Carrots..  Always yum.. Will chop for the boys to snack on.
Courgettes... Possible I'll fry them off or make spiralized noodles.
Spinach.. Stir fry? Or maybe in a salad.
Kohl rabi.. Not entirely sure what this is! One to google later.
Broad beans.. Well as a legume they are not strictly paleo but as I'm not a strict paleoist I'll cook and enjoy.
Butternut squash.. My default would be soup. I wonder if I can be a little more adventurous!

As always the key to making sure I use all these items is planning.

This box was actually free. I used a code 'book&box' and got this,the fourth box free,as well as an excellent cook book on my second delivery.

DAY 1 .Pursuing a Paleo-ish lifestyle

DAY OFF

I know a Paleo diet works for me.
I know this and yet I still eat bread. And toast. Too much toast.
I need to reinvigorate myself with energising Paleo food and stop with the lethargy inducing beige food groups that I seem to favour.

BREAKFAST:
I have a packet of bacon in the fridge. Although this is not the ideal nitrate free variety, it is tasty and still meat. Nitrate and addictive free varieties are something to look into after this initial phase. I just need get started. Today!

So, bacon (5 rashers... they are thin and I'm hungry)
1 scrambled egg
fried mushrooms... fried in olive oil

oh and yes, tomato sauce.
I need something 'saucy' to eat this type of meal. I really do miss baked beans and as I didn't have any tomatoes to add to the dish, a squirt of ketchup was sufficient.

Note to self..... aspire to make home made ketchup, or research more paleo friendly versions.


As I am on a day off today I need to get my breakfasts organised for my next two mornings coming up at work. If I don't plan well I will end up in the canteen with beans on toast, or cheesy toast, or peanut butter on toast... see the trend there!?
While I'm eating my breakfast the rest of the packet of bacon is frying off. I'd already fried all the box of mushrooms and added a chopped green pepper to the mix.



 Five beaten eggs and there you have it.... two giant omelettes prepped, cooked and in the fridge now ready to be grabbed on the way to work and be zapped for a minute in the works microwave to make a quick, filling  and tasty breakfast. Organisation is the key to success.


I've just seen the Riverford van pull up, so lets see what this weeks box contains....
